Description

Raw cakes, packed with nutritious benefits, can be considered a healthier alternative to conventional cakes. Since the ingredients are not exposed to heat, their nutritional value and natural color remain intact.

Unlike traditional cakes, raw cakes don’t require baking and are free from gluten, eggs, dairy, and refined sugars. Instead, they contain only whole, natural, plant-based and unprocessed ingredients such as nuts, seeds, fruits, superfoods and unrefined sweeteners and oils.

 

Lore Salas (creator of @datesandavocados) teaches you, through more than 90 minutes of HD videos, all the techniques to create and decorate the most beautiful, show-stopping raw cakes! In this course, she also shares all the knowledge, secrets and tips she has acquired over the years with notes, charts and useful information to help you master the art of making raw cakes

You won’t be on your own! You will be able to communicate with your instructor, ask her any questions you may have and benefit from her support and feedback throughout the course.

WELCOME!

In this first module, we show you everything you need to navigate the platform confidently: a video tutorial, to acquaint you with the structure of the platform; instructions for how the course works; and also other practical information like icon legends, glossary, and the most common food allergies and sensitivities you should keep in mind to enjoy the recipes safely.

EQUIPMENT & INGREDIENTS

Here you will find information about all the ingredients used to make raw cakes, from unrefined sugars to healthy oils and fats, special ingredients such as superfoods or essential oils, and much more.

BEFORE YOU BEGIN

In this module, you will find tips for a successful experience in the kitchen, how to reduce food waste, and many of the fundamental factors that play a key role in the taste and texture of your desserts, such as flavor balance, pairings, and how to improve the plating and presentation of your creations.

BASIC PREPARATIONS

It’s time to start playing around in the kitchen! This module contains the basic preparations that are necessary before you jump into making your first raw cakes, and a video showing the techniques for dehydrating fruits and making colorful fruit powders to use as decorative elements for your desserts.

RAW CAKES

The most fun part is in this module! Here you will find recipes, videos, written materials, and all the secrets, tips and tricks to make show-stopping, delicious raw cakes from scratch. You will also find a compilation of the most common issues, their causes, and suggested solutions to help you avoid mistakes, make the recipes confidently and achieve the best results.

FINAL PROJECT & GRADUATION

Time to put your new skills to the test and create your own raw cake masterpiece! If you have successfully passed all the assignments, you will be awarded our certificate.

When you complete the course successfully, you will have the tools to give free rein to your creativity and come up with your own delicious desserts.



MANGO & LIME CUPCAKES

Sweet mango, acidic lime, tart passion fruit, and a perfectly ripe avocado. These are some of the ingredients of this healthy and delicious summery dessert. Fresh fruits give a lovely pop of color and extra volume to these creamy cupcakes. A great opportunity to practice your cake-decorating skills!

CREAMY BLUEBERRY & WHITE CHOCOLATE SLICES

Learn the secrets to achieving perfectly smooth edges and delicate, silky creams and frostings, with this light mousse-like cake. The shiny blueberries on top are one of the many pro tips that will make your cakes stand out at any celebration.

CHOCOLATE & ORANGE GANACHE TART

The combination of the nutty, crunchy crust with the silkiest ganache and the simply beautiful cacao glaze on top, makes this rich, creamy tart the ultimate vegan chocolate dessert. 

Fresh orange juice and zest get a boost from a few drops of pure orange essential oil and the red currants on top add extra-fresh color and flavor.

Lore Salas

With a background in civil engineering, Lore moved from Barcelona to the US and decided to pursue her true passion: food. She graduated as a Baking & Pastry Chef and later on joined Matthew Kenney Culinary where she became a Raw Chef. By that time, she started sharing her recipes and knowledge on Instagram @datesandavocados. That led to the publication of her first book “Dulce sin Culpa” (“Sinless Sweets”) with Penguin Random House Spain. Lore’s core mission is to spread awareness about how plant-based food can fix our food system, reduce the impact on the environment and lead us to a healthier and more balanced lifestyle.
INSTRUCTOR

Carolina Chinea

Born in Tenerife, Carolina has always been passionate about the arts and food. She has worked extensively in different areas of the arts and cultural events management, designing and running workshops on different subjects including photography, graphic design, art, marketing, and many more. Starting her career in Art History, this artistic flare carries through her life and work in food design and culinary projects. She specializes in plant-based food cuisine, consultancy, food experiences, product development, workshops, chef training, and creative concepts, all rooted in food expression with nature as a core.
